cornbread dairy & gluten free

This cornbread has had RAVE reviews by every person that has tasted it.   A couple of tricks:  use organic ingredients and when you heat the oven up place the dish you'll be baking with inside to heat up with it.   Randy got all of our grains here online. 

You need: 

  • Ground flax
  • Water
  • Corn Meal
  • Oat Flour (make sure it's Gluten Free) 
  • Fava Bean Flour
  • Sugar
  • Baking Powder
  • Salt
  • Unsweetened coconut or almond milk
  • Coconut Oil
  • Dried cranberries (or craisins if you like sweeter) OPTIONAL
  • Banana
  • Veggie Spray Oil

ALMOND milk


I learned how to make my own creamy and delicious almond milk.  It was crazy CRAZY simple.  If you want to make it thicker just reduce your water to 2 cups or if you want it thinner add half a cup.  

You can experiment with added flavors like cinnamon, peppermint or vanilla just by adding a teaspoon of it during the 2 minute blend!

You need:

  • Raw Almonds (organic preferably)
  • 3 cups of water (filtered preferably)
  • 2 Bowls
  • Sieve & Cheese cloth

Krusteaz Natural Honey Corn Bread INGREDIENTS

"INGREDIENTS: Enriched unbleached flour (wheat flour, niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid, malted barley flour, may contain enzymes, ascorbic acid), sugar, degermed yellow corn meal, canola or soybean oil, salt, leavening (sodium bicarbonate, sodium acid pyrophosphate), honey powder, xanthan gum."

 NOTE:  I ried to locate the ingredients for the Marie Callender's Cornbread (it was the first one I thought of to compare and I've had it in the past (always left a weird aftertaste).  I COULD NOT FIND THE INGREDIENTS.  That's not a good sign.  

 A couple of tricks:

Place baking dish in the oven when you start the pre-heat.

Line up ALL of your ingredients before you begin.
